Broiled Crusted Tilapia & Easy Hollandaise Sauce

Lately I have been making recipes I have already posted on here which explains my lack of posting new recipes. I did make some tweaks to these recipes tonight. I made Curry Chicken with Broccoli and Cauliflower last night. I made a ton of veggies so we had some of those veggie leftovers for tonight's dinner.  I found the recipes on the blog:  yourlighterside.com  The link to the actual recipes are: Broiled Crusted Fish yourlighterside.com/broiled-crusted-tilapia/ Easy Hollandaise Sauce yourlighterside.com/recipe-low-carb-gluten-free-lazy-hoandaise-sauce/ Broiled Crusted Fish Ingredients:  4-6 skinless tilapia filets 1/4 cup butter, melted, dived 1/4 cup grated Romano cheese (the original recipe is Parmesan cheese but I was all out) 1/2 cup flax seed meal (you can use Parmesan cheese instead of this) 2 TBS parsley 1/2 TSP garlic powder 1/2 TSP pepper Directions: Arrange fish on a greased baking pan.  Brush with 2 TBS melted butter.  Broil for 5 minutes.

Buttermilk Roast Chicken

I have made this many times. I was at Safeway the other day and saw Buttermilk was on sale so I decided to grab some chicken. I love this chicken and highly recommend it. Make sure to marinate this for 1-2 days, the longer the better. I usually marinate for 2 days. But I have to work tomorrow night so I had to make it tonight, so it only soaked for 1 day but it was fine. I made a new green bean recipe to go with it instead of my usual mock mashed potatoes (cauliflower). I used a lot of paprika on it right before I put it in the oven and it came out extra flavorful.  Ingredients:  2 Cups buttermilk 5 Garlic cloves, peeled & smashed 1 Tablespoon table salt (1 Tablespoon granulated Splenda) 1.5 Teaspoons paprika, plus extra for sprinkling Lot of freshly ground black pepper (1 Tablespoon of your favorite hot sauce or to taste) -- I actually used some red pepper flakes to give it a little kick.  2 Pounds chicken parts (I usually use either legs or thighs and on

Holly's Turkey Loco Moco

I know I have said it before but I just want to reiterate how much I love food in Hawaii. Hawaii is such a great melting pot of Asian/American fusion food. Before I changed my ways every once in a while I would treat myself to a plate lunch. Usually it was either BBQ Chicken or something like that. I never really ate Loco Moco's until about three years ago. I was always afraid of how fattening they are. Regular Loco Moco's consist of: hamburger patty, rice, gravy and a runny over easy egg.  I had ground turkey I needed to use and leftover turkey gravy and that gave me the idea to try this. I have say, this was a lighter version of the real thing. I did make rice for Mike but I skipped the rice myself. Creamy Chicken Scampi

I wanted to make something easy and use chicken. Many chicken recipes recommend using breast but I'm a thigh kind of gal. Mike's Birthday: Sugar Free Oreo Cheesecake

(Sorry you guys but this picture does not do this justice) Yes you read that right, I made a Cheesecake. Have I ever made Cheesecake before? No. Do you know that I literally jumped and danced when I found Sugar Free Oreo's at Safeway. Oreo's have always been one of my favorite cookies. While Mike and I were in Pittsburgh, PA this past week for his brother's wedding everyone had a cake for Mike. His Mom, Dad and his close friend Pam. He also got cake at the wedding too. I had a feeling he was caked out a bit. Luckily, I have never been that crazy about cake. I do not care for the frosting and the texture of the actual cake bothers me. But I LOVE cheesecake. I have joked I would rather have a cheesecake or pie for my wedding reception. Bacon Wrapped Stuffed Mini Sweet Peppers

Here is what I did:  Ingredients: 2 large containers of Philadelphia Cream Cheese (Sorry but I cannot stand any type of generic cream cheese, it's got to be Philadelphia and the low calorie one) 1 bag (about 20-25) small multi colored sweet peppers 1 TBS dried basil 1 TSP dried parsley 1 TSP garlic powder About 1/4 of a cup of Romano cheese 1 Package of regular bacon (I did cut the pieces in half so there would be more but next time I will be sure to just get 2 packages of bacon --  I recommend getting 2 packages.  Directions: Wash the peppers.  Cut around the stem at the top to remove steam and core/seeds. The Tiny Kitchen

The pictures are not high quality and I just took pictures with my phone today but I wanted to give you an idea with how small and what I have to work with in my kitchen. And here is my little stove top/oven... Our refrigerator is not huge but it's also not like a tiny 'fridge you have in your dorm room. Thanks to always having leftovers, we NEED that space.  I also got a simple hand mixer today. It was only about $7 at Walmart bu it should help me mix certain things. I do want a food processor but Walmart did not have any cheap ones today. I have had one before but it broke on me a few years ago and I never replaced it. One of these days my Mom and I are planning on going to Bed, Bath and Beyond and I will look there for one. It just needs to be cheap and small. If someone can recommend one to me I would greatly appreciate it. 

Pork Chops with Mushroom Dijon Sauce

Ingredients: 4 bone-in pork chops Lemon pepper seasoning 1 Tbsp vegetable oil 1 cup sliced mushrooms 1 can cream of mushroom soup 1/4 cup of milk 2 Tbsp dry white wine 2 Tbsp Dijon mustard Directions: Season chops with lemon pepper. Heat oil in skillet. Add pork chops and cook until browned. Remove the pork chops.  Add mushrooms and cook until tender.  Add soup, milk, wine and mustard. Heat to a boil. Add pork hops. Cook over low heat for 10 minutes. I found this recipe on Food.com.  I also made myself a small salad with cherry tomatoes and cucumber. I had it with Annie's Honey Mustard dressing.

I have gone through some major changes this past year and have managed to lose 90+ pounds. I follow a strict Low Carb lifestyle. I have found many delicious Low Carb recipes and this is the place where I plan to show them in addition to new recipes I try. I am not a chef. Once in a while I make my own recipes but I more so I tend to tweak a lot of recipes to make them lower in carbs. I also strongly believe in giving the credit to where I get my recipes from. Dinners are my specialty but I am always looking for new ideas for breakfast. Leftovers are my go to's for lunches as well.  To answer a few questions: Yes, I have a tiny kitchen. I will post pictures to show how small it is and what I have to work with. I do not have a dishwasher which is a HUGE pain. But despite the lack of a dishwasher and a small kitchen I have found ways around it and have made many delicious meals. I  do not have any fancy cooking items either. I have very basic kitchen supplies. I also live on a budge
