The Tiny Kitchen

The pictures are not high quality and I just took pictures with my phone today but I wanted to give you an idea with how small and what I have to work with in my kitchen. And here is my little stove top/oven... Our refrigerator is not huge but it's also not like a tiny 'fridge you have in your dorm room. Thanks to always having leftovers, we NEED that space.  I also got a simple hand mixer today. It was only about $7 at Walmart bu it should help me mix certain things. I do want a food processor but Walmart did not have any cheap ones today. I have had one before but it broke on me a few years ago and I never replaced it. One of these days my Mom and I are planning on going to Bed, Bath and Beyond and I will look there for one. It just needs to be cheap and small. If someone can recommend one to me I would greatly appreciate it. 

Pork Chops with Mushroom Dijon Sauce

Ingredients: 4 bone-in pork chops Lemon pepper seasoning 1 Tbsp vegetable oil 1 cup sliced mushrooms 1 can cream of mushroom soup 1/4 cup of milk 2 Tbsp dry white wine 2 Tbsp Dijon mustard Directions: Season chops with lemon pepper. Heat oil in skillet. Add pork chops and cook until browned. Remove the pork chops.  Add mushrooms and cook until tender.  Add soup, milk, wine and mustard. Heat to a boil. Add pork hops. Cook over low heat for 10 minutes. I found this recipe on Food.com.  I also made myself a small salad with cherry tomatoes and cucumber. I had it with Annie's Honey Mustard dressing.

I have gone through some major changes this past year and have managed to lose 90+ pounds. I follow a strict Low Carb lifestyle. I have found many delicious Low Carb recipes and this is the place where I plan to show them in addition to new recipes I try. I am not a chef. Once in a while I make my own recipes but I more so I tend to tweak a lot of recipes to make them lower in carbs. I also strongly believe in giving the credit to where I get my recipes from. Dinners are my specialty but I am always looking for new ideas for breakfast. Leftovers are my go to's for lunches as well.  To answer a few questions: Yes, I have a tiny kitchen. I will post pictures to show how small it is and what I have to work with. I do not have a dishwasher which is a HUGE pain. But despite the lack of a dishwasher and a small kitchen I have found ways around it and have made many delicious meals. I  do not have any fancy cooking items either. I have very basic kitchen supplies. I also live on a budge
