Asian Flank Steak Marinade

I found this recipe at:  www.epicurious.com/recipes/food/views/Grilled-Asian-Flank-Steak-with-Sweet-Slaw-242464 But I was in a bit of a hurry and ended up using it more of an inspiration recipe. This came out surprisingly good. I did pair this with some mashed celery root and vegetables.  Ingredients: 1 & 1/2 pound flank steak 1/4 cup soy sauce 5 TBS vegetable oil 1 & 1/2 TSP ground ginger 1 TSP garlic powder Directions: Combine all ingredients and put into a zip lock bag.  Let this marinade for about 30 minutes.  You can cook this on a grill or stove top. I used my stove top and it came out fine. 

Low Carb Beef Lasagna

I know, I know it's been a while since I have been on here. I honestly have not been making any new recipes lately and just repeating old ones. A few people have been bugging me to post more so I tweaked my Low Carb Beef Lasagna recipe tonight.  Ingredients: 1 large onion 2 cloves garlic, minced 1-2 cups mushrooms 2 zucchinis 1 pound ground beef (I always use 97%) 14 oz can of pizza sauce (I used a Ragu version) 1 TBS dried parsley 1 TBS Italian seasoning blend 15 oz ricotta cheese 4 cups mozzarella cheese, divided 1/4 cup Romano cheese 1/2 cup Parmesan cheese Freshly ground salt & pepper to taste Directions: Pre-heat the oven to 350 degrees.  Heat a frying pan on high and use olive oil cooking spray. Turkey Burger's with Daikon Fries

Honestly, fries are a major trigger food for me. I just can't have one. So I came up with a substitute! You can find Daikon at any Asian grocery store.  I found this recipe at: yourlighterside.com/2013/03/daikon-fries/ I really did not follow the recipe exactly and just fried them in a frying pan. I also had some Ground Turkey to use up so I made some Veggie Burgers to pair it with. (UPDATE: You can also bake these and I highly recommend that!) Beef Fajitas

Tonight I threw together a very easy dinner. I paired the Fajita's with some refried beans. Mike had a tortilla while I skipped my low carb tortilla and just ate the inner parts with sour cream, salsa and cheese.  Ingredients: Sirloin beef steak, cut into strips 5 red, yellow and orange bell peppers 1 small onion, chopped 1 pound mushrooms, chopped 1 fajita seasoning pack (yes, I'm lazy and did not make my own seasoning) 1/4 cup of water Directions: Heat a large skillet with Pam cooking spray Add the beef to the skillet till slightly brown Add the seasoning pack and 1/4 cup of water Add the veggies, cook until veggies are soft.  Serve and enjoy!

Roasted Curried Cauliflower

I had a full head of cauliflower I needed to use up tonight. I originally planned on making more Mock-a-roni and Cheese but never got around to it. I decided to pair it with my dinner tonight, Fried Paprika Chicken and have an 'around the world' flavors dinner tonight. Mike was not exactly thrilled with the pair of the two dishes BUT both did come out good on their own. I think next time I will make Curried Chicken with sauce with this dish.  This recipe I made has a good punch to it. Paprika Chicken cooked in the frying pan

It's no secret I love paprika. When I make any type of eggs I always like to include this spice on my eggs. I love the sweetness to it. I found some chicken drum sticks on sale and honestly I have grown tired of chicken thighs and breasts. I thought the drum sticks would add a bit more diversity to my meal palette. I literally did a Google search for chicken with Paprika and not just Chicken Paprikash. I have made Chicken Paprikash so many times so I wanted to make something different. I found this recipe on Allrecipes.com: allrecipes.com/recipe/paprika-chicken/ The original recipe calls for baking the chicken but I did not wait super long and had a good idea I could easily make this in a skillet. Zucchini Lasagna Revised

I have made this once before and it came out fantastic!!! I decide to make it again and do some minor tweaks to it. Red Wine Vinegar-Glazed Pork Cutlets

This recipe was so easy to make and I made in about 20 minutes and used a single frying pan.  I got this recipe from my mom's boyfriend in one of his cooking magazines. He also gave me a great idea to, instead of using balsamic vinegar to substitute it with red wine vinegar.  The original recipe is from: Cook's Country, February/March 2013 Issue I honestly forgot to take photo's.  Ingredients: 4 oz Boneless pork cutlets, about 1/4 inch thick trimmed Salt & Pepper 1 TBS olive oil 1 Garlic clove, minced 6 TBS Red wine vinegar (or substitute this for balsamic vinegar) 2 TBS packed brown sugar (I used a Splenda blend) 2 TBS Un-salted butter 1 TBS Fresh parsley 1 TBS Dijon mustard Directions:   Pat pork dry and add the a large skillet with olive oil.  Season with salt and pepper and cook until golden brown.  Remove from heat and to a plate. Steak Tips with Red Wine Sauce & Mock Mashed Potatoes Using Celery Root

Usually when I try a new recipe it takes me about an hour to create it. Well, this recipe was a HUGE exception and took about exactly 30 minutes. I finished this very quickly along with making Mock Mashed Potatoes using celery root again. The celery root was a huge hit with Mike the last time I made it so I decided to make it again. I mentioned to him about making it again and his eyes lit up like it was Christmas morning. That always makes me feel good.  Tonight's dinner came out awesome but the sauce caramelized a bit too much because I think I cooked it too long and I left out the butter in the recipe.  Thanks to the oil, I really did not think I needed it and felt it made it a bit lower fat.  I may make more sauce for the leftovers because the sauce was so good but will just double the beef broth. It is no secret that I am Irish. (Update from 2017: I did a DNA analysis and I'm 44% percent Irish). My last name is both Irish and Scottish.  When St. Patrick's rolls around I love it. Vegetable Stuffed Burgers with Oopsie Rolls

I have made the Oopsie Rolls and similar burger's before but I modified the burgers a bit so that is why I made a new blog entry. Instead of putting the cheese in the middle, I switched that and put the Mushroom and Onions inside and then added the cheese when we were ready to eat it after the burgers were cooked. Lately I have been making recipes I have already posted on here which explains my lack of posting new recipes. I did make some tweaks to these recipes tonight. I made Curry Chicken with Broccoli and Cauliflower last night. Buttermilk Roast Chicken

I have made this many times. I was at Safeway the other day and saw Buttermilk was on sale so I decided to grab some chicken. I love this chicken and highly recommend it. Make sure to marinate this for 1-2 days, the longer the better. I usually marinate for 2 days. But I have to work tomorrow night so I had to make it tonight, so it only soaked for 1 day but it was fine. I made a new green bean recipe to go with it instead of my usual mock mashed potatoes (cauliflower).
