Turkey Burger's with Daikon Fries

Image
Honestly, fries are a major trigger food for me. I just can't have one. So I came up with a substitute! You can find Daikon at any Asian grocery store.  I found this recipe at: yourlighterside.com/2013/03/daikon-fries/ I really did not follow the recipe exactly and just fried them in a frying pan. I also had some Ground Turkey to use up so I made some Veggie Burgers to pair it with. (UPDATE: You can also bake these and I highly recommend that!) I used this recipe as my inspiration recipe for the Turkey Burgers:  allrecipes.com/recipe/actually-delicious-turkey-burgers/detail.aspx Diakon Fries Ingredients 1 pound Diakon radish, skinned and sliced into 1/4" x 1/4" strips 1/2 cup water, divided 2 TPS vinegar, divided 1 TSP salt, divided 1/2 cup peanut oil, divided Directions Put 1/4 cup water, 1 TSP vinegar,  1/2 TSP salt and 1/4 cup oil in a frying pan and heat on high.  Add 1/2 pound Diakon strips. Cook for about 10 minutes until brow...

Zucchini Lasagna Revised

Image
I have made this once before and it came out fantastic!!! I decide to make it again and do some minor tweaks to it. The leftovers turned out to be one of my favorite lunches.  I found the original recipe/idea at:  yourlighterside.com/low-carb-recipe-lasagna-without-noodles-zucchini/ I did have to make a few modifications so the recipe I'm posting is the one I made.  Ingredients: 2 Large zucchini squash Olive oil Cooking spray 2 Cloves garlic, minced 1 Cup mushrooms, chopped 1/2 Cup Yellow Onion, chopped 1 LBS Ground Turkey or Ground Beef (I used Turkey this time) 12 oz Jar of Pizza Sauce (I used the Ragu Brand) 3 Cups shredded Mozzarella cheese, divided 2 Cups Cottage Cheese, full fat 1/2 cup grated Parmesan Cheese 1.5 TBS dried chopped Chives Salt & Pepper to taste Directions: Preheat the oven to 350 degrees.  Wash the Zucchini's and then using a peeler, take of the outer skin and discard.  Using a sharp knife cut the Zucchini ...

Vegetable Stuffed Burgers with Oopsie Rolls

Image
I have made the Oopsie Rolls and similar burger's before but I modified the burgers a bit so that is why I made a new blog entry. Instead of putting the cheese in the middle, I switched that and put the Mushroom and Onions inside and then added the cheese when we were ready to eat it after the burgers were cooked. These are super filling and I had veggies to eat but I was so full I skipped the veggies.  I got the original recipes from:  For the Oopsie Rolls : yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/ Veggie Stuffed Burgers : www.fatsecret.com/recipes/cheese-and-vegetable-stuffed-burgers/Default.aspx Oopsie Rolls (low carb/gluten free) Image Source: yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/ Ingredients: 3 large eggs 1/8 TSP cream of tartar 3 oz cream cheese (Do not soften) Directions:  Pre-heat the oven to 300 degrees.  Separate the egg yolks and whites into two different mixing bowls.  Add c...

Holly's Turkey Loco Moco

Image
I know I have said it before but I just want to reiterate how much I love food in Hawaii. Hawaii is such a great melting pot of Asian/American fusion food. Before I changed my ways every once in a while I would treat myself to a plate lunch. Usually it was either BBQ Chicken or something like that. I never really ate Loco Moco's until about three years ago. I was always afraid of how fattening they are. Regular Loco Moco's consist of: hamburger patty, rice, gravy and a runny over easy egg.  I had ground turkey I needed to use and leftover turkey gravy and that gave me the idea to try this. I have say, this was a lighter version of the real thing. I did make rice for Mike but I skipped the rice myself. This had a nice lightness to it compared to the regular Loco Moco you buy at plate lunch places. Mike and I literally inhaled it.  Ingredients: 1 pound ground turkey Worcestershire sauce 1/4 cup Planko bread crumbs 1 turkey gravy packet Eggs over easy (make as much...
