Paprika Chicken cooked in the frying pan

It's no secret I love paprika. When I make any type of eggs I always like to include this spice on my eggs. I love the sweetness to it. I found some chicken drum sticks on sale and honestly I have grown tired of chicken thighs and breasts. I thought the drum sticks would add a bit more diversity to my meal palette. I literally did a Google search for chicken with Paprika and not just Chicken Paprikash. I have made Chicken Paprikash so many times so I wanted to make something different. I found this recipe on Allrecipes.com: allrecipes.com/recipe/paprika-chicken/ The original recipe calls for baking the chicken but I did not wait super long and had a good idea I could easily make this in a skillet. I also wanted to pair it with some Roasted Cauliflower and that needed to be made in the oven. The cauliflower won the race for the oven. I will post the recipe for the cauliflower. It is a Roasted curried cauliflower Recipe. This Chicken came out phenomenal. Way better than I had...

Buttermilk Roast Chicken

I have made this many times. I was at Safeway the other day and saw Buttermilk was on sale so I decided to grab some chicken. I love this chicken and highly recommend it. Make sure to marinate this for 1-2 days, the longer the better. I usually marinate for 2 days. But I have to work tomorrow night so I had to make it tonight, so it only soaked for 1 day but it was fine. I made a new green bean recipe to go with it instead of my usual mock mashed potatoes (cauliflower). I used a lot of paprika on it right before I put it in the oven and it came out extra flavorful.  Ingredients:  2 Cups buttermilk 5 Garlic cloves, peeled & smashed 1 Tablespoon table salt (1 Tablespoon granulated Splenda) 1.5 Teaspoons paprika, plus extra for sprinkling Lot of freshly ground black pepper (1 Tablespoon of your favorite hot sauce or to taste) -- I actually used some red pepper flakes to give it a little kick.  2 Pounds chicken parts (I usually use either legs or...

Creamy Chicken Scampi

image source:  http://peaceloveandlowcarb.blogspot.com/2012/10/creamy-chicken-scampi.html This is a new recipe I made today and had for dinner tonight. It came out really good. I wanted to make something easy and use chicken. Many chicken recipes recommend using breast but I'm a thigh kind of gal. I got the original recipe from: http://peaceloveandlowcarb.blogspot.com/2012/10/creamy-chicken-scampi.html Ingredients: 1.5 LBS chicken thighs or breasts 6 garlic cloves - minced 6 TBS butter - divided (I subbed using Pam cooking spray instead to lessen the fat content) 1 cup chicken stock or broth (I always use broth) 1 cup heavy cream 1/4 cup Parmesan cheese - grated (I was out of Parmesan so I subbed with grated Romano cheese instead) 6 oz mixed bell peppers (I used red, orange and yellow -- I'm not a huge fan of green) A few slices of onion 1 TSP Italian seasoning 1/2 TSP red pepper flakes Salt & pepper to taste Pam cooking spray Directions: Salt...
