Vegetable Stuffed Burgers with Oopsie Rolls

Image
I have made the Oopsie Rolls and similar burger's before but I modified the burgers a bit so that is why I made a new blog entry. Instead of putting the cheese in the middle, I switched that and put the Mushroom and Onions inside and then added the cheese when we were ready to eat it after the burgers were cooked. These are super filling and I had veggies to eat but I was so full I skipped the veggies.  I got the original recipes from:  For the Oopsie Rolls : yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/ Veggie Stuffed Burgers : www.fatsecret.com/recipes/cheese-and-vegetable-stuffed-burgers/Default.aspx Oopsie Rolls (low carb/gluten free) Image Source: yourlighterside.com/gluten-free-low-carb-buns-aka-oopsie-rolls/ Ingredients: 3 large eggs 1/8 TSP cream of tartar 3 oz cream cheese (Do not soften) Directions:  Pre-heat the oven to 300 degrees.  Separate the egg yolks and whites into two different mixing bowls.  Add c...

Low Carb Chocolate Pancakes Image source:  alldayidreamaboutfood.com/2013/02/chocolate-chocolate-chip-pancakes-low-carb-and-gluten-free.html Ingredients: 6 Large eggs, lightly beaten 1/2 cup coconut flour 1/4 cup almond meal (This was my modification to make these a little less runny) 1/3 cup cocoa powder 1/2 cup vanilla whey protein powder 1/4 cup powdered erythrithol (I used Truvia) 1 TSP baking powder 1/2 TSP salt 1/3 cup coconut oil (I didn't have this so I used Vegetable Oil--I recommend using Coconut Oil if you have it) 1 to 1.25 cups almond milk (I did not have this either, so I used regular 2% Milk-- next time I want to use either Heavy Whipping Cream or Half and Half, my pancakes were just a little to runny) 2 oz gluten-free high % cacao chocolate, finely chopped Pam cooking spray for the pan Directions:  In a large bowl, stir in the eggs first. It always easier to stir the eggs and break the yolks apart first. I did use my handheld ele...

The Pantry

Image
If there is one thing that I really like in my kitchen, is the fact I have pantry. They can be hard to find in apartments in Hawaii and I got lucky to have one.  I had some time this morning and after making a gross discovery last night, I decided to give it a clean out. Which you should do about every six months. Before I did this clean out, my pantry was stuffed with no room to spare. It still is pretty full but my stuff had started migrating to the cabinet above which is where Mike keeps his cereals. I am actually quite proud of the results.  I read many other 'foodie' blogs and people always seem really interested in what people always have in stock in their pantry. Also, remember Mike does not completely eat low carb, so there is stuff in there that is not low carb which I do not eat and Mike does. I told Mike about this blog entry and he obviously pointed out I want to show off my pantry now it is all cleaned out and completely organized. Generally, I kept the sam...

Broiled Crusted Tilapia & Easy Hollandaise Sauce

Image
Lately I have been making recipes I have already posted on here which explains my lack of posting new recipes. I did make some tweaks to these recipes tonight. I made Curry Chicken with Broccoli and Cauliflower last night. I made a ton of veggies so we had some of those veggie leftovers for tonight's dinner.  I found the recipes on the blog:  yourlighterside.com  The link to the actual recipes are: Broiled Crusted Fish yourlighterside.com/broiled-crusted-tilapia/ Easy Hollandaise Sauce yourlighterside.com/recipe-low-carb-gluten-free-lazy-hoandaise-sauce/ Broiled Crusted Fish Ingredients:  4-6 skinless tilapia filets 1/4 cup butter, melted, dived 1/4 cup grated Romano cheese (the original recipe is Parmesan cheese but I was all out) 1/2 cup flax seed meal (you can use Parmesan cheese instead of this) 2 TBS parsley 1/2 TSP garlic powder 1/2 TSP pepper Directions: Arrange fish on a greased baking pan.  Brush with 2 TBS melted butter....

Buttermilk Roast Chicken

Image
I have made this many times. I was at Safeway the other day and saw Buttermilk was on sale so I decided to grab some chicken. I love this chicken and highly recommend it. Make sure to marinate this for 1-2 days, the longer the better. I usually marinate for 2 days. But I have to work tomorrow night so I had to make it tonight, so it only soaked for 1 day but it was fine. I made a new green bean recipe to go with it instead of my usual mock mashed potatoes (cauliflower). I used a lot of paprika on it right before I put it in the oven and it came out extra flavorful.  Ingredients:  2 Cups buttermilk 5 Garlic cloves, peeled & smashed 1 Tablespoon table salt (1 Tablespoon granulated Splenda) 1.5 Teaspoons paprika, plus extra for sprinkling Lot of freshly ground black pepper (1 Tablespoon of your favorite hot sauce or to taste) -- I actually used some red pepper flakes to give it a little kick.  2 Pounds chicken parts (I usually use either legs or...

Holly's Turkey Loco Moco

Image
I know I have said it before but I just want to reiterate how much I love food in Hawaii. Hawaii is such a great melting pot of Asian/American fusion food. Before I changed my ways every once in a while I would treat myself to a plate lunch. Usually it was either BBQ Chicken or something like that. I never really ate Loco Moco's until about three years ago. I was always afraid of how fattening they are. Regular Loco Moco's consist of: hamburger patty, rice, gravy and a runny over easy egg.  I had ground turkey I needed to use and leftover turkey gravy and that gave me the idea to try this. I have say, this was a lighter version of the real thing. I did make rice for Mike but I skipped the rice myself. This had a nice lightness to it compared to the regular Loco Moco you buy at plate lunch places. Mike and I literally inhaled it.  Ingredients: 1 pound ground turkey Worcestershire sauce 1/4 cup Planko bread crumbs 1 turkey gravy packet Eggs over easy (make as much...

Creamy Chicken Scampi

Image
image source:  http://peaceloveandlowcarb.blogspot.com/2012/10/creamy-chicken-scampi.html This is a new recipe I made today and had for dinner tonight. It came out really good. I wanted to make something easy and use chicken. Many chicken recipes recommend using breast but I'm a thigh kind of gal. I got the original recipe from: http://peaceloveandlowcarb.blogspot.com/2012/10/creamy-chicken-scampi.html Ingredients: 1.5 LBS chicken thighs or breasts 6 garlic cloves - minced 6 TBS butter - divided (I subbed using Pam cooking spray instead to lessen the fat content) 1 cup chicken stock or broth (I always use broth) 1 cup heavy cream 1/4 cup Parmesan cheese - grated (I was out of Parmesan so I subbed with grated Romano cheese instead) 6 oz mixed bell peppers (I used red, orange and yellow -- I'm not a huge fan of green) A few slices of onion 1 TSP Italian seasoning 1/2 TSP red pepper flakes Salt & pepper to taste Pam cooking spray Directions: Salt...
